not to get technical on a joke, but I think they may have quickly grilled it for like 30 seconds, and then have Jorm spit it out and not swallow. You can eat raw meat (humans did it for thousands of years before discovering fire) you just can get sick.

Also depending on how it was prepared, you can very well eat it raw, that's what a tartare is (IE just cut from a known butcher minutes before the show). It probably tastes terrible without out at least the outside cooked, which is why he is spitting it out and looks grossed out, but even if he ate it he wouldnt be sick from it.
Also, Jorma not finding the hotel in Park City is hilarious to me. Park City isn’t that big 😂 like, I know it’s a joke, but thinking about that happening cracks me up! Then again, I don’t live far from PC
