I like this recipe, and the classy manner with which you handle trolls. I'm not against a good trolling session, but I only do it to other a-holes, not genuinely nice people like yourself. Would something like a Guinness stout work for the alcohol portion of the chili, or would that not be a good flavor? Been subscribed for a few months now, keep up the good work!

WOW!!!! now that's a chili I'm gonna have to try.......One question.....we only have 1 dutch oven....if I use it on the smoker.......will it clean good enough to use in the house again, or is it for the smoker now?
I made a similar chili in the same way but used a chuck roast seasoned with chili powder cooked to about rare then cubed it and cooked till tender it was really good I'm going to try it this way
When you put the meatball over the pot my first thought was, thats gonna be a lot of grease.. Glad you whipped out the paper towel at the end to soak some of that fat up. Interesting technique, I'll give it a go
Yessir i know that's what most say but since I'm a native born texan I do disagree with the statement. To me my momma's chili.is tx chili because my great grandpa and grandpa & she grew up in San Angelo tx area and even great grandpas family b4 him were native texan just like I was born in San Angelo and the next generation in our family was. Since tx red wasn't declared the state food until 1971 I think, well my family as Texans predates that by a bunch and we are about as texan as Texas. We make ours with beans. For those who like beans in their chili like me, using a combo of dry black & pinto beans creates an AWESOME FLAVOR. Grandpa was raIsed around Nolan tx, great grandpa was born in 1900 and his parents were born in Texas too. My chili recipe is phenomenal but it isn't trilingual chili

To be real Texas chili you have to lose the tomatoes too. There are so many delicious chili recipes that have beans, tomatoes, both or just a bowl of red with neither. I’m Texan and love to bring my killer brisket chili w/ beans to functions and watch so called purists starve as everyone else raves about the best chili they’ve ever eaten. 🤣🤣🤣 Got to try this. Surprised me that you started off with just 1 tsp cp and 1 tsp cumin. For that big ol pot of chili, I started of with 2 Tbs of cp and 1 Tbs of cumin. I know you cautioned about too much too early but curious if and how much more you added later? Btw this video is awesome! I have done this one 3-4 times already since watching it.
My wife put the cast iron kettle of pit beans on my brand new cutting board. Know we only have one side to show off. The ring will not come off. She says it looks used and loved.

had some concerns about being greasy, but i get it ... the good juices make their way into the chili and the pure fat floats to the top where you can skim or towell off to your liking.

I typically use a "clean hand" that doesn't touch anything other than the rubs. Can always do that as well.

It's definitely a different technique, but it creates incredible flavor. Highly recommend.
Your respect for chili is awesome but just one note in regards to using beans(they do belong btw) but dried beans are a much better choice

My observation has been that most TX'ans eat beans "with" chili, but not cooked "in" chili.
