Glad to see use goat meat (& canned some of it). I use to raise meat goats. Try flattening a pork & a goat roast, fill between the two with stuffing, then roll & tie up. Slow roast.
Homemade buns were a recent add to my repertoire and so glad I made them because they are so much better than store bought but also freeze great. So my future self is saying thank you 😂

Ooh, Juliet Child’s chicken liver pâté (mousse) is truly delicious, easy to make, and wonderful on crispy toast with pickles. It freezes well. I “seal” mine with a thin layer of melted butter on top and decorate it with herbs or edible flowers before the butter hardens, instead of the traditional aspic. It defrosts well and makes a lovely addition to a charcuterie or cheese board. One of the organ meats that’s a palatable entry into pâtés. Have fun!
Questions for meal time: if you could build a brand new kitchen, space and cost not a limiting factor, what would you want to have (certain countertop material, gas range, double ovens, deep drawers, extra large appliances, etc?). This would interest me coming from both a chef's point of view and a gardener/preserver's point of view. Thanks. Love the What's For Dinner videos! When my kids. Were little we raised our own beef in made teriyaki liver. Cut in strips stir fry ad soy sauce brown sugar onions bell peppers and anything you want thicken with cornstarch serve over rice. If you soak liver in milk first it takes the liver taste almost away my kids loved it but not liver lol. We also ate beef heart cut cube it really well Pan fry make a milk pan gravy tastes just like cube steak so good thanks for sharing love your shows

I grind organ meat up and put in chili, meatloaf, spaghetti and hamburgers…..Dehydrated and put in soups, casseroles and even smoothies. Anything like stuffed peppers and cabbages is good also.
I have beef butchered too and make pickled heart and tongue. Maybe a Pennsylvania Dutch thing, not sure. If you like pickled beets you may like pickled meat. The way I do liver is soak in milk for a couple of hours, then bread it with flour and fry in butter and onions. Only way I will eat liver.
I have an idea about gardening...have you considered using an "earth box" or container gardening? You can have the best of both worlds: you can let your garden rest and use containers to get your fresh homegrown tomatoes and herbs. It's "food for thought"🍅🍅
Give this a try to get the label off the ketchup container. Put about an inch of water and replace the cover. Microwave for about 20 seconds to start. Add a little more time as needed until the label peels off cleanly. Then you can put your delicious ketchup in it and create your own label 👍🏼
Love organ meats. Head cheese, mom and dad would make their own liverwurst. Blood sausage was a favorite when slaughtering a pig. No fear when tasting or making. Pig tail used for making a lentil or split pea soup.

Beef and noodles over mashed potatoes is one of my favorite meals. When my kids were little they called it Boof and Needles. Your canned goat meat made me think - next time we get a deer, I will can some deer this way for fast meals.
RE: Organ Meat. There is a new company called PLUCK. They create organ meat spice blends. Those of us with freeze-dryers and dehydrators could do this ourselves. Make a spice blend, and include a freeze-dried organ meat powder. I thought the idea was clever.

I hide organ meat in our ground deer and the kids don't know it. I soak it in milk for a hour, put it in the food processor and puree the organ meat, mix it with the ground meat and make it however we are using it. It makes hamburgers taste like they are from restaurants! My kids love them! And taco meat too! That's the only way we eat them, except for bologna and summer sausage that my dad makes.

You should measure the PH. They are $~14 a bush @ TSC. Fruit trees are ~$40! Ouch! Looks like your grill has a side smoker. Do you watch other garden streams? Chicks are in. Did you buy anything to later harvest? You have a decent weed wacker/Trimmer? If you aren’t going to be pulling weeds (a.k.a., gardening), you need to trim them down.

Yeah! A greenhouse. That would be a good gardening type project and still be a land resting compliant project. Or a sauna! Then you could broadcast and strategize from the sauna instead of the dinner table. Both useful.

I've heard the ground goat meat is fantastic for meatballs. I don't have a connection to goat meat anymore but that may be a way to use the meat.
