Just a small correction in English...you "dissolve" the flour(semolina etc.) in water.....when you "melt" it is under heat, like cheese melt in the oven ;D

Actually, you need some acid in dough to react with baker powder. Is it acid from tomato paste, vine, vinegar, or even lemon juice - it is not so important. So, you can try different for your taste. I think mashed kivi with sugar will be interesting addition to the base dough.

The alcohol when is cooked will evaporate
