First of all,remember, if your anydesk run automatically with your windows Startup then he has opportunity to access your pc, if he set password or trusted his device on your anydesk.

He can access if he know password or his device is trusted and if he has full access.

You can click "clear all tokens" in security settings, and this way he loses permanent access. If he wants to log in again then he needs to use the same password and you have to accept again the first entrance.
