Oh my my gosh! I beat Rachel! (Or maybe I messed up). I usually only get these after pausing the video for multiple minutes: ((75-1)/(100/50))x25+4 = 929
I was shocked, too. I saw Rachel's solution after about 10 seconds, and had to double-check when nobody got it. Only the second time I've beaten Rachel. And I'm assuming your 2 was from 100/50?
I was surprised she didn't go this route too. I found this solution too after a pause during which I exhausted all the obvious routes. It seemed like the next course would be to just see how many 25s you needed, and the answer falls out from there.
So admittedly, it took me about 45 seconds to get the last numbers, and I became optimistic I could better Rachel for the first time ever...then... well you know the rest

Rachel can spent ages on a round until she cracks it. Very competiive in that regard.

I did the first one differently:
25+75=100
7-5=2
100*2=200
200+7=207
I think outside the box.
