Tocino del Cielo | Eating with Andy

- Tocino del Cielo, which literally translates to “Bacon from Heaven”, is a dessert similar to a crème caramel or flan. It was introduced by the Spanish when they colonised Peru and was originally created by Nuns, hence the name. It is very simple to make, uses only a few basic ingredients and is absolutely heavenly!
INGREDIENTS (Serves 10)
8 eggs, room temperature
3 cans of condensed milk
1 tsp vanilla extract
1 cup coconut shreds
Caramel
1 cup caster sugar
½ cup water
Passionfruit Sauce
1 cup passionfruit pulp with seeds
1 tbsp sugar
To serve:
Coconut shreds, toasted
Lime zest
Sea salt flakes
TIPS
- Mold dimensions: 28cm x 13cm x 7cm terrine/bread/loaf mold/pan. Try to find a mold that is as close to those dimensions, doesn't have to be 100% exact.
- For the Caramel, keep a close eye because once it starts changing colour it can burn very quickly. You want it to be a dark golden brown. Once, you see it turn that colour, remove from the heat immediately and pour into the mold.
- When coating the bottom and sides with Caramel, DON’T FORGET TO USE OVEN MITTS as the mold will become very hot!
- To test your custard is properly cooked, insert a sharp knife/skewer gently into the centre. It should come out clean.
- If you’re having trouble demolding your custard, leave the mold in boiling water for a bit longer and give it a whack with the palm of your hands when inverting it into a serving plate.
- If you want to get more caramel out of the mold, add a splash of boiling water into the mold and mix with a spoon.

I do not know why she calls it Tocino del Cielo. The real tocino del cielo IS NOT prepared with any milk at all, neither condensed, nor evaporated, not even real milk. There are many videos showing the rea Tocino del Cielo That been said, as a FLAN or Spanish Custard, which is what this delicious recipe is, I can confess that it is the most delicious looking desert I've ever seen! Especially, the delicious Parchita (Passion Fruit) sauce, which is my favorite tropical fruit, besides Guanabana (Sour Sop). I can't wait to make it and enjoy it. KUDOS to this beautiful young lady! What U say is true. Tocino de Cielo is from Andalucía Spain. And have no milky content. But as she comments the spanish thru the convents gave the idea, and the flan recipe which is european, and the coconut were used in this idea. I delicious, recommended.

Oh, the original Spanish version uses Simple syrup instead of the Condenced milk? That's why it looks different!🤔
I've made your recipe TWICE already. The whole family loved it and the addition of the passionfruit sauce, lime and salt added an elevated touch. I was amazed how well all those elements worked with it as I've eaten this dish before as it is with nothing else and found it a bit too sweet (i know peruvian desserts are meant to be that way). But adding all the other stuff made it ZIIIIING. Very clever Andy. Lots of love from NYC,USA. p.s my whole family loves you and your food.

I think 2 cans is condensed milk is too sweet plus the caramel .
TheBlaster Yes this is a really sweet dessert! (Peruvians love super sweet desserts) It’s usually eaten on its own, that’s why I added the lime zest, salt + passionfruit sauce. All those additions help balance the sweetness.

Is this the original recipe?..traditional recipe for tocino del cielo is way different....
This recipe is similar to a custard flan but with an addition of coconut...
though flan and tocino del cielo are very similar...
But tocino only uses 3 ings... Egg Yolk, sugar syrup and caramelized sugar....and not using dairy or milk...
Milk goes for the custard flan....
But thanks anyway for this sweet recipe....diffntly not a tocino del cielo
This is a Peruvian version of Tocino de Cielo which was adapted from the original Spanish recipe...this is what you will find in Perú. I added the passionfruit & lime as my twist as I think it complements it beautifully.
