    Disclaimer: Salted Fish is considered to be carcinogenic. Nevertheless, it has been a part of Cantonese and Chinese tradition for centuries, and it was a staple of my parents' diet growing up, so we still decided to publish the video and preserve the recipe.
    As with most foods, the dosage matters. According to the IARC, salted fish falls in the same carcinogenic category as processed meats (like bacon, ham, salami), alcoholic beverages, and tobacco, among other items. Use your best judgment, and if you want to enjoy this dish, do so in moderation.

    3:36 just want to share that 梅香was probably霉香 originally, meaning rotten and fragrant, hence the tender meat texture. It was probably not nice to write “rotten” so people switched to calling it 梅香which sounds the same in Cantonese.
    Also I want to say I love your channel! I learned a lot from Daddy Lau! And so nice listening to him teaching in Cantonese!

    Migrants from Canton influenced and enabled fried rice styles to evolve in Malaysia and Indonesia and elsewhere. Nasi Goreng literally means fried rice, but in a spicier style. When salt fish isn't used, you can use Spam, or chopped Char Siew, or shrimp. You can also add peas, carrots and corn and butter to the mix. The fried rice platform is quite modular. Oh yes, not forgetting K-kimchee fried rice.

    My favorite food. the best one is the fish have on bones cant tell you how hard it is to find good salted fish and chicken fried rice. I been to restaurants that the salted fish have bones or it not aromatic tasting plain. I miss my grandma cooking so seeing your dad cook bring back memories of her cooking. As a Hong Kong born in America finding my childhood dishes make me happy and tasting and comparing it to other restaurants. Sadly I am sushi chef so my experience in cooking Chinese food is low.

    My Amah used to make this for me when I was a little kid in Hong Kong. I'm 60 this year and this has brought back fantastic memories. I think I'll try your recipe next weekend with my grandkids. Thanks 👍.

    Thank you for sharing this, I learned to love it as college student, in the 1970's, eating with classmates from Hong Kong & Guongdong. I am not Chinese and when I returned to the restaurant later without my friends, the owner always asked if I really wanted salted fish! Thankfully he accepted my assurances and served the dish.

    I remember eating haam jyu steamed pork with hot rice as a young child! It was absolutely delicious and although very "fragrant" for Western noses was a very memorable comfort food! This dish has become very hard to find in today's restaurants...

    Cooked lettuce was a revelation to me- I love it in fried rice, but is my favourite 5 minute veggie side dish too- just coke with garlic, cooking wine, oyster sauce and a pinch of sugar for balance!- soooo good!

    because we lived in a tropical country my late dad used to make salt fish himself, just scaled and gutted them , lots of salt, wrap in newspaper, tie up and hang outside on the sun to dry for a few days.

    One of my all time favorites, if not in fact my very favorite for that matter. I used to work in a control tower in Sacramento and one of my coworkers hated fish so I'd pick some up at Lai Wai (our local restaurant, pretty much ate there every day) and bring it back to the tower to eat it while she was plugged into position working planes and couldn't leave. I love that dish so much!!!

    Interesting, i wonder what it would be like with smaked fish. Thanks for the recipe, nice to see it preserved for the future. Can not get traditional salted chinese but i can get salted cod, i think we will try with smoked fish trimmings a well. Take care, God bless one and all.

      would probably taste better with the smoke but if it's unsalted, you'll need to add salt and more fish sauce. fried rice has always been better with smoky flavor. stir fry noodles too, it tastes better with wood smoky flavor.

      I made it once with canned smoked herring I bought on a whim from Big Lots one day. Wasn't half bad as a substitute in a pinch.

    Im surprised you just made this now. This is my favorite fried rice. If this is on the menu, youre in a legit cantonese restaurant. Also siu mei, and dim sum.

    Lettuce in my fried rice is a great way to add extra greens (and use up lettuce when salads just don't cut it)

    I may try this with some bacalao I have in the pantry. I'm not sure how the flavor would compare to the salted whole fish used in the video but it would make things a bit easier.

      Bacalao works but you might want to rehydrate a bit it first. Otherwise it would be way hard. But the flavor is similar.

      問題很簡單,炒鍋要燒到夠熱才放油,(如係鐵鍋要見到鍋中心轉白色)。先炒蛋再放入飯一起炒就不會黐鍋了。非常感謝您的支持!老劉祝福您同家人安康快樂!

      Don't know daddy Lau's reply but I would say that yes you can. But remember to add less salt or soy to the cooking. Portuguese Bacalhau is even more salty than chinese style salted fish. Do not use Portuguese way to handle Bacalhau for this dish. Use it as chinese salted fish replacement.
