I never knew it was even possible to make Lego Bricks with these foods! Fun video! Also for train designs as you mentioned at 3:23 I recommend the Black 5 Steam Engine from England as it’s a very elegant design that I think would look great in Lego form!

Jello legos are easy, you just have to add more gelatin (so they come out firmer) and figure a way to add the anti-studs so they stack properly. (The King of Random did a GREAT video a while back on it.)
Hi, I have a suggestion for the train! Maybe you could have a lot of carriages in it, and each of them are the theme of a different food item! Or maybe each carriage could have two different food themes (by "food theme" I mean the food the minifigures are of, like carrots, pop corn, corn...) Like one on each side!

@The B3 what helps to get the "little hairs" off the corn is before you shuck it pop it in the microwave for 4-5 minutes the cop the end of the corn and take the corn out of the leaf casing thing
