Nice vid! FFT basically determines the amount of bins or bands the audio is split into. So 1024 splits it into 1024 different bins with every bin getting it's own processing. Majorly different sounds if you change it :)
There's also really cool standalone called cecelia 5 that's great for spectral processing and a lot of other stuff, its a bit old but it has so many awesome features, and you can reroute it to your daw through blackhole ;)

I don’t remember exactly what I did, but I noted that I used phaseplant (prob just a sine wave), 2 instances of supermodal, and 1 instance of portal.

there's a time dial on the left side of infiltrator but it also has to do with the sound you're running through it.
