No offense meant but chorizo must NEVER be added to paella. You can call this rice with chicken and sausage but not paella because we don't add chorizo to paella.
Just use fresh chicken or seafoods so it gets closer to real paella. There is no such thing as hotdog paella. Please don't desecrate this traditional dish,
