If they are too small to filet, use a good quality knife/kitchen sheer to gut them. Then use a good quality kitchen sheer to de-fin them (remove all fins and tail by cutting slightly below the meet), and use your preferred method to take the head off. (We use sheers for all of the above). Pop them in the pressure cooker for about an hour and a half to two hours (depending on size) in chicken broth and preffered seasonings. If you want once they are done, you can add a thickener of choice to the broth. Serve over rice pilaf, rice, baked potatoes, squash, etc. You won't even notice there are bones in them. The bones/meat all soak up the seasoning and the bones become almost indistinguishable from the meat. We harvest almost everything over about 3 inches up to our limit. Between my wife and I, both with good sheers, we can easily clean a good 30-40+ in around 10-20 minutes.
