    The funniest thing happened this morning. I went to Trader Joe’s, picked up a couple bags of kale and the garlic and one of the employees came over to me and asked if I was making the Chef AJ Mediterranean recipe!!! She was also gathering all the ingredients to try it as well. So funny :)

    I tend to buy most of my food organic but I did an experiment where I bought all my food at the 99 Cents store and it was very cheap. I don’t worry for the most part because I travel full-time and I can’t eat 100% organic but I do the best and bless the rest

    I made this recipe last evening and it is DELICIOUS! It is super easy, super quick, and extremely filling! I could not eat it all, but did have the leftovers with a baked sweet potato for my lunch today! I can't wait to use kale from my garden to make this weekly if not more often!     This is fantastic! I'm not a huge fan of kale, but this I can eat. I added mushrooms and some diced onion to the mixture, so yummy. Thanks Chef AJ for another great recipe.

      Linda Goldsberry After not prep’ing it for ages, I’ve included (curly) Kale recently with other stir-fried veggies (no oil) & also finely sliced in salad. I’ll have to look out for the Mediterranean variety! 🥬

    I just ate a bowl of this and I am so full! Next time I am eating this as a side to lentils or sweet potatoes. I would add some dried herbs next time.

      I used my scissors to cut up the kale in the InstantPot before cooking. I'm sure it wasn't as fine as AJ's, but it worked for me!

    Hi Chef AJ...Thanks for all the great recipes.....I watch a lot of budgeting videos & I am trying to cut down on my food bill. Have you ever talked about your monthly grocery bill? I spend about $600.00 a month for my husband and myself. We do eat meat. I am curious what you spend on average a month on food. I hope you don't find this question offensive.... I realize money talk is taboo in general. lol Have a great day. I am going to try this recipe this week.

      I have a video on this channel about my haul for the 99 cents store but I don't worry about spending any amount of money on healthy food as I stopped spending money last year on everything else. I no longer buy clothing, makeup etc.

      Suzie D- She also does so much cooking for her dogs, cooking demos, and groups that she would not be representative. I can tell you I live alone and spend between $250-300/month, don’t eat meat, but I do eat out a lot. I think $600 is a lot for two people.

      We are a family of 2 adult vegans, WFPB, low fat, and spend about $1000 a month on food. I do most of our grocery shopping and buy organic when it’s available. We rarely eat out. I think a lot of it depends on the cost of living where you love. We live in a touristy area and prices are higher.

    Much of what I eat is dirt cheap. For example I get legumes and whole grains for $.49 a pound and a 20 pound bag of potatoes for about five dollars

    I take leaves of siberian kale, fresh, washed, and tand slice. Then I put the kale into a saucepan with a knob of good normal salted butter, a couple of cloves of garlic, put on lid and steam for a few minutes, that’s it, wholesome, a few minutes and perfect.By the time the butter is darkening the the kale is cooked.

      CHEF AJ oh course not. Polyunsaturated lipids are ageing, they polymerise and crosslink and interfere with cellular functions dreadfully. Even add to skin wrinkling in response to sunlight. Butter is great, it carries the flavours and complexities of the grasses and little flowers in the pastures eaten and varies with season, and actually does carry the oils you prefer but in balanced by calming longer chain saturated molecules. My parents lived well, highly intelligent active and nice looking to the end on a diet including good milk and butter and cream from well pasteurised cows on nTive australian grasses.

      @@gloglos100 Hi. I don't know if you know this already, but Chef AJ is a plantbased vegan chef. There is nothing you can say or do to change the minds of people who have been there, done that, learned the truth and consciously choose to do different. That is especially true for those who have an ethical reason for avoiding animal products. This recipe looks great and I am going to try it!

      DaniJo2320 my version could be done with say coconut oil. and sprinkled with walnuts, I saw the complexity and huge product placement which is not to the advantage of people watching h which was the trigger for posting. I expect vegans to automatically translate if interested. The lipid is helpful for absorption.
