Microwave Sponge Cake

  • This airy and spongey microwave sponge cake is made using a whipping siphon and N20. I decided to colour mine with 25 grams of beet juice but you can take this out and just add in a few drops of the food colouring of you choice. The whipping siphon and the microwave cooking technique make the texture of this cake super light and airy and give it almost coral like appearance. This is a really great molecular gastronomy technique for plating desserts, I've even seen people flavour this in a savoury way adding herbs and the like. Adding this to a plate really adds a nice element of both texture and visual interest. This microwave sponge cake recipe is also super fast to make. The batter requires ingredients you likely already have on hand.
    If you don't have a siphon, don't worry, I'm working on a recipe to get this type of texture without it so that recipe will be up on my channel soon!

    75 grams ap flour
    90 grams sugar
    80 grams melted butter
    25 grams beet juice

    If you don't have the spray thing(idk what its called) keep the egg white appart whip them up. Mix the rest of the ingredients. Take a small part of the egg white and mix it with the rest. Add everything to the rest of the egg white and stir gently

    Thanks!!! This turned out delicious! I did a vanilla cake, milk-vanilla foam with white sesame and a balsamic reduction and called the plate "A trip to the Moon" (Get it? All white?) Truly delicious!! Keep on making videos, they are amazing.

    I'd love to know sipphon alternatives :) look forward to that video and with regards to this video whenever I've tried a microwave cake recipe if it's not eaten in like 2-3 minutes it gets supper dry. Any tips on how to prevent this?

      I find the same thing, this cake dries out quite quickly. During service I only ever make these to order but perhaps you could dry putting some simple syrup in a spray bottle and giving them a mist to keep them from getting dry.

      I have successfully made this without a whipping siphon. However, to achieve the texture a lot of compromises had to be made. The base recipe needs a high level of baking soda, a noticeable acid element, the baking vessel needs to be tall and narrow. In the end the texture had the cobweb appearance, but needed such sweet condiments to sweeten over the soda and acid that it made it a pointless exercise.

      Well, you could take the eggs and the sugar and beat the living heck out of them until a thick pancake batter and then fold in the dry and wet. And use oil instead of butter. Usually a cake is dry when they use butter.

    I wanted to make a raspberry flavored sponge and wondered if I substituted the beet juice for raspberry juice (I would use a juicer) would yield the same result with the berry flavor?

    Did you put the siphon in the fridge with the batter? or were the siphon and the N2O chargers were cold before you added the batter?

      You could whip the egg whites and fold it in to the mix but idk if it would be as good? Could work tho

      Hi Francine! Try replacing the flour with a gluten free flour blend for baking and then add in a small amount of xantham gum and see how you go. I haven’t tried this but that would be my recommendation.

      Hey Michael, I haven’t tried freezing them actually but I imagine that would work fine! I might brush them with a simple syrup first though since these cakes do have a tendency to get a bit dry quite quickly.

    I know this mite sound daft what do these sponges taste?

      Not daft at all, it tastes like a regular white cake the texture is just a tad different. It's a lot more airy. I would say it's less moist than regular sponge and these need to be made to order or they dry out quite quickly. It's just a neat plating technique that adds a cool coral like appearance to desserts :)
