  • Including green leafy vegetables like spinach or palak in your diet is very important. Hence every state in india seems to have their own recipes for spinach. Here is one of the Kashmiri versions. Simple and extremely easy to make
    Ingredients
    3 cups Spinach Leaves (Palak)
    10 cloves Garlic
    1 Black cardamom (Badi Elaichi)
    3 Kashmiri dry red chilli
    1 tsp Fennel Powder
    1 tsp Cumin seeds (Jeera)
    1 tablespoon ghee
    1 pinch Asafoetida (hing)
    Salt to taste
    Method
    1. Wash and clean the spinach leaves well. Finely chop them and set aside.
    2. Heat oil on medium high. Now add the cumin seeds, asafoetida, cardamom, red chillies, garlic and saute for a few minutes, until the garlic begins to turn into a light brown colour.
    3. Add spinach leaves and salt and continue to cook on medium-high heat until the spinach wilts. Add the fennel powder and mix well.
    4. Remove from fire. Serve with rotis.
