Kaby Lake is basically Skylake (6th gen) but with _slightly_ better overclock capabilities, which doesn't even matter for Apple considering you can't overclock 99% of laptops, including Macs.
You are correct, the only company that has been making big progress in the CPU game is Apple lately with the A series processors. CPU progression has hit a wall.
Yeah, it's kind of unfortunate. I hope AMD will make as much of a comeback as they plan for with Ryzen and become a good budget option, but there's no telling for what will happen in the future. Maybe AMD will knock some sense into Intel and the 8th gen processors will have better performance than the complete drop off we've experienced since the newer Intel Haswell processors.
