Lunch: Shrimp Fried Rice 2 tablespoons oil 1/2 lb shrimp 2 eggs 3 cups cold rice 1 cup frozen peas and carrots 1/2 teaspoon MSG (optional) Salt and white pepper to taste Soy sauce to taste Green onion 1 teaspoon sesame oil -into a large wok on high heat add 1 tablespoon oil and cook the shrimp for a few minutes add a pinch of salt and white pepper. Remove from the wok and add the eggs whisking continuously. Add the rice and veggies, msg, salt, white pepper and soy sauce, quickly toss together. Add the sliced green onion and sesame oil. Toss and serve hot. Snack: Yogurt, strawberries and granola Dinner: Pasta with Meat and Veggie Sauce 2 tablespoons olive oil 1 onion, diced 2 cups of veggies cut into small pieces (I used carrots, celery, red bell pepper and a handful of spinach) 8 cloves garlic, minced 1 (24 oz) jar of marinara sauce 1/4 cup water or broth 1-2 teaspoons salt, or to taste 1 teaspoon each: black pepper, garlic powder, onion powder, smoked paprika and Italian seasoning (or to taste) Grated parmesan cheese to taste Chopped parsley for garnish Bow ties pasta Directions: Into a skillet, add the olive oil and sautee the diced onion for about 4 minutes, then add your diced veggies. Add a pinch of salt and cook until softened 5-7 minutes. Add a handful of spinach and minced garlic. Cook for about a minute and place into a blender. Blend until it reaches your desired texture. In the meantime, into the now empty skillet, brown 1 lb if ground beef, breaking it up as you go. Add the veggie blend, jar of marinara and water/broth. Add the seasoning and let it simmer while you cook the pasta. Add the grated parmesan and fresh parsley.

I love the yogurt one I make myself a Greek yogurt with honey, granola, chunks of any fruit I have at home usually mango, strawberries, and sometimes pineapple or melon it’s heath and amazing
That meat/veggie sauce looks so great. You wouldn't believe it if I told you but I still have to do "hidden veggies" for my almost 20 year old kid🤣 I figure it's a texture thing. I want to try more vegetarian/vegan dishes so that mixture looks like a great way to use the Impossible Burger type "meat" packets since they're on the small side, but mixing them with multiple things will bulk it up, plus add more veggie intake.
