Are you a fan of the classic Apple Pie? We are giving it a remix and making a Caramel version, so today’s recipe I am sharing with y’all a Caramel Apple Pie!!
Simple, easy, full of Apples and Spices baked in a buttery pie crust with a touch of Caramel; perfect dessert to end a Fall’s Meal also a great new addition to your Thanksgiving dinner coming up!!! Everyone will love and enjoy this pie!!

3 large or 6 to 8 medium Granny Smith apples, rinsed, peeled, cored, and sliced (1/4-1/2 inch thick)
1 cup white sugar
1/4 cup packed light brown sugar
2 tablespoons cornstarch
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon ground cardamom
1/8 teaspoon kosher salt
1 tablespoon freshly squeezed lemon juice
1/2 cup caramel, recipe follows
2 tablespoons unsalted butter, cut into chunks
2 pie crusts for 9-inch pie, homemade, refrigerated, or frozen (deep dish)
Butter chunks, for top of the crust, optional
White Sugar, for dusting on top
Egg Wash:
1 large egg, lightly beaten
1 tablespoon water or milk
Caramel Sauce
1 cup packed light or dark brown sugar
4 tablespoons (1/2 stick) unsalted butter
1/2 cup evaporated milk
Pinch kosher salt
1 teaspoon pure vanilla extract
Ellen’s Magic: You may use another type of apple for this recipe: Golden Delicious, Honey Crisp, Gala, Pink Lady). If using homemade or refrigerated pie crust, grease the pie dish with butter. If it burns to quickly, add some aluminum foil around the edges. You may also use my Apple Pie Spice recipe in place of the other spices, use about 1 teaspoon.
Apple Pie Spice
4 teaspoons ground cinnamon
2 teaspoons ground nutmeg
1 teaspoon ground cardamom
Pinch ground allspice
In a medium bowl, add cinnamon, nutmeg, cardamom, and allspice; mix everything together until well combined. Store in a sealed jar or container.
For the Caramel Sauce
In a medium saucepan over medium-low heat, add in the brown sugar, evaporated milk, salt, and butter; whisk until well combined and cook until slowly thickened. Remove from the heat and add in the vanilla extract. Pour the caramel into a bowl and cool completely.
Preheat Oven to 400 Degrees
Place 1 pie dough onto a lightly floured surface and roll a disk out into a 8 to 10 inch circle. Press the dough evenly into the bottom and sides of the pie dish and set aside.
In a large bowl, add the sliced apples, white sugar, brown sugar, cornstarch, lemon juice, cinnamon, nutmeg, allspice, cardamom, and salt; stir until well combined (it will create a glaze). Pour the apple filling into the pie crust, drizzle on the caramel on top of the apples, then add the 2 tablespoons butter chunks right on top of the apples and set aside. Roll the other pie crust on a floured surface about 1/4-1/2 inch thick.
For the Lattice Strips: Using a knife or pizza cutter, cut it onto 1/4 to 1/2 inch wide and lay out 3 to 4 strips on top of the pie then go the opposite way and add 3 to 4 strips. Trim the edges of the strips then crimp to secure.
For the Whole Crust: Roll the crust then place it on top of the pie. Seal the edges of pie crust then cut into 4 small slits in the middle.
Brush the pie on top with the egg wash, then add the butter chunks (if desired) and sprinkling of sugar. Bake for 50 minutes or until golden brown and the apples are bubbly. Remove from the oven and cool completely on a wire rack. Serve with vanilla ice cream and enjoy!
