Squash and Fish: Squash Fish Mousse and Cod Wrapped in Zucchini, Stuffed Squash Blossoms

  • Today, I made squash and fish with squash blossoms! I had wild caught cod that my sister gave me! The vermouth sauce gave the cod the richness it needs and I really enjoyed it :)
    I referred to chef Thomas Keller's recipe in his The French Laundry and Per Se cookbook for the squash fish puree.
    I've recently been more into simple and elegant dishes like this, so I will be trying to do more dishes in this style in the future!

    Wonderful. I never knew that squash flowers were edible. I've had Courgette (Zucchini) flowers but never squash flowers.

    Is potato starch same as cornstarch?Thx

      Corn starch isn't as effective as potato starch. To give it the same effect, it will require a lot more corn starch haha.

      @@satviksehgal5147 you can brush the fish with a little bit of egg white! It should do the trick 👍

    I liked everything until your “sauce” the technique you used to make the abstract pattern made it look like vomit in my personal opinion. I would recommend using a dropper to have better control over how much your two colors mix together
