I would have built the carrot farm on the side of the mountain instead right in the ice that way I can avoid being fully exposed by the mobs. Place the cobble stone as you did on the ice but just make a floating plank of it and place a piece of cobble right underneath where you'll put water and the rest dirt surrounding the place hold of water leaving the top exposed directly to the sun. No hate just an idea. : )
consider adding the "tectonic" world gen mod, it makes it so that world gen is a little more realistic while still having that minecraft feel (mountains can go up to 300 blocks tall its pretty cool)
You can get your render distance much much higher by installing the distant horizons mod it does something almost every open world game does, change how detailed a block is based on how far away you are from it you could pretty easily get 10,000 blocks render distance

Technically speaking, you don't *need* water in order to farm food. It takes like twice to grow and soiled farm without crops break, but it's possible
