- Hey family!! In today's video I'm making a Springy Dinner & Dessert! The temperature is warming back up and Spring is, once again, in the air! Titus and the boys go fishing in the evening and I make a Jell-O Poke for dessert and a Cajun Chicken Bake for supper. One of them is not a winner with the family... Can you guess which one? 🤣

Ingredients
Cajun Seasoning: (NOTE: I just used a store bought Cajun Seasoning.)
1 teaspoon paprika
¼ teaspoon cayenne pepper
¼ teaspoon oregano
¼ teaspoon thyme
¼ teaspoon salt
Chicken
2 bell peppers , small, thinly sliced (or use mini sweet peppers)
4 chicken breasts , small
4 cloves garlic , minced NOTE: I forgot about the garlic... Ooops!
6 oz cream cheese , cold, refrigerated, and sliced into 8 slices
½ cup cheddar cheese , shredded
Instructions
How to make Cajun chicken seasoning:
Combine all seasoning ingredients in a small bowl. Mix to combine.
Cajun chicken
Preheat oven to 375 F. NOTE: I went with 350 because my oven angry cooks sometimes and I didn't want to dry out the chicken! 🤣
Place thinly sliced bell peppers on the bottom of the casserole dish.
Place chicken breasts on top (so that the peppers will cook underneath the chicken).
Generously sprinkle Cajun seasoning all over the chicken breasts. You don't have to use all the seasoning. Top with minced garlic.
Top each chicken breast with 2 slices of cream cheese.
Top with shredded cheddar cheese.
Bake the chicken uncovered at 375 F in the preheated oven for 20-30 minutes until the chicken is cooked through.
Broil for 2 minutes, if desired.
To serve, scoop the bell peppers from underneath the chicken. Place them evenly around the chicken and on top.
Jello Poke Cake:
Ingredients:
1 box (18.25oz.) white cake mix
Ingredients listed on box to prepare cake
2 boxs (3 oz.) strawberry (Jello)
2 cups hot water
1 tub (8 oz.) Cool Whip, thawed
1large box or two small boxes instant vanilla pudding, and milk to make it(3 cups)
Bake the cake according to package directions using a 9x13-in. baking pan.
While the cake is baking prepare the vanilla pudding according to package directions. After the cake has baked, remove from the oven and allow to cool for 30 minutes. Using the handle end of a wooden spoon or a meat fork, poke cake every inch or so with the handle of wooden spoon or fork. There is no set number of holes, but you want plenty of places to fill. Mix the strawberry gelatin with 2 cups of hot water until dissolved. Pour the Jello evenly over the cake, trying to fill the holes as much as you can. Spread prepared vanilla pudding over the cake. Top with Cool Whip. Here you can add fruit or other topping if you want to. Refrigerate for at least 4 hours before serving.
Store leftovers in the refrigerator.

In a church cookbook I have, there is a poke cake made with strawberry soda. With the large box of jello, mix with 1 1/4 cup boiling water and 1 can strawberry soda. For the frosting, mix vanilla pudding with 1 1/4 cups milk and 12 oz. cool whip. Pretty much like your topping, but mixed together. Very refreshing and light summer dessert.

Maybe before the cream cheese softens slice it rather thin so you end up with much less on a piece. That might make a huge difference.

That looks so good. Maybe mix the cream cheese with some shredded cheese. Also Kent Rollins has a homemade Cajun seasoning that is so good! If you want to look it up, its on his Cowboy Gumbo recipe, we made that the other night and it was oh soo good!

When we make that Jello poke cake, we put a can of pies filling instead of pudding & then cool whip on top. Match the flavor of Jello with the pie filling, i. e., cherry with cherry and so on.
Next time maybe whip up the cream cheese and spread it with some seasoning over the top and maybe the family will like it better :) imcsnt wait to try this

They do when they are allowed. That river is in a national forest and right now it is Delayed Harvest, which means they have to catch and release. They can't keep them until sometime in May and then Delayed Harvest starts again in November. 😁👍

A game changer for me was when I learned to make any cake mix box bakery style by changing the water to milk the oil to melted butter and an extra egg. It makes for a more rich and moist cake.
