We put a piece of greased fig leaf in the bottom of the dish before assembling the pie, then as soon as it’s out of the oven! Place another piece of banana leaf on the top and then cover with foil and to steam, in that way, you get the some of the real pastelle smell and flavor.
Oh yes!! I am in Canada and can’t get the fig leaves to make the pastels. This will be a great alternative. Thanks so much for these great demonstrations of my favourite foods - and your fantastic personalities too!!
Wonderful recipe. A little variation for me would be to some how line my dish with greased banana leaves before adding my cornmeal. And still add some at the top to create that true true long time flavor. Might be tricky being in the oven but with some thought its doable.
@@DC-vw7yf yes. Just like with the actual pastel, after heating the leaf to make it pliable you rub a little oil to help it come out smoothly from the pan.
Excellent👏👏👏 I like using shadow benny and spanish thyme to cook the meat and finish off with chopped chives and hot pepper😁 to spice things up..the colour was sooo tempting👍👍great job👌👌

Made this but it used about 2 cups of corn meal alone. 3 cups would have gotten it stiff. Note that I followed all the measurements. Not sure if this happened to anyone else.
I like to cook the beef Halfway, then remove it from the pot and I cook my aromatics in the beef fat before adding the beef back in to finish cooking...
Hey foodienation, I was wondering how come we don't wash minced meat (chicken, beef, pork etc) with lime or vinegar but we wash the chicken pieces, beef etc.
Such a good alternative to the norm. As much I love a good pastelle, I really don't want to buy my fig leaves from the Hmart. "LIVING IN AMERICA PROBLEMS" LMAO.

I totally agree but the leaves add that earthy flavor so I'd try it at the base n top ....no tying no folding no steaming
