    Hello from western Washington (and Idaho native), and thank you SO MUCH for sharing your God-given talents and wisdom with us city folk who wish to be country folk! Oh, how I miss the country!! I am struggling with SOURDOUGH STARTER. How do you make sourdough starter FROM SCRATCH? That is my goal; to learn how to make things from scratch, not a can of this or package of that from the store! I have ankylosing spondylitis and my husband and I have problems with irritable bowl, and we are beginning the trek of healthy eating from as close to heirloom ingredients as possible in this day and age. :-)

    Made these and they were fabulous, I accidentally added twice the butter but turned out great anyways! My new favorite roll recipe. I needed to find a better roll, after making sourdough bread at home for the last year white rolls have no flavor. Soft, tasty and wonderful!

    My family and I have recently discovered the Homesteading Family!! I have always wanted to grow own food and make stuff some scratch but have been kinda overwhelmed by all the info out there. You break it down and make it not so overwhelming, like, "Hey, I can do this, too!" We live in a suburb but have a good size yard, so I'm really anxious to get started in planting our garden. I had ankle surgery in November, so there's not much I can do now except watch your videos and learn as much as I can. I really don't like using so much processed stuff and eat fresh foods as much as I can. Where we live we cannot have animals for our own meat, but there is a butcher not too far from here. Is this meat better than what to buy in the store, even though the stores have butchers on-site and put the meat out as they go? Can I can this meat the same as you can fresh meat? I'm so excited to try the methods you have put out here. God created our bodies not to put a bunch of chemicals and stuff in them, so I want to do as fresh as I can. Thank you again. :)

    I have a batch of this dough doing its first rise right now!
    I watched your video and wrote down the quantities but then also printed out the recipe you kindly produced and a couple of the ingredients are rather different quantities.
    On the video you suggest 1.5 cups buttermilk but on the printable it says 1 cup and the other difference is the salt, 1/2 teaspoon on the video but 2 teaspoons on the printable. I’ve kind of made up my own recipe somewhere between each, I’ll let you know how it comes out, the dough feels fabulous after first kneading!

    It also helps the flour to hydrate some before you add last amount of flour. You might find you need less

    I made these today following the printed recipe on your site. The recipe says 2tsp salt which is different from your video. It also doesn't say the dough should be elastic so mine came out a bit stickier and less boingy. I think you should add the internal temp trick to the printed recipe. Mine rose but I didn't know if they were done. Anyway, they look wonderful and are so huge! The rolls came out wonderful (my starter was whole wheat btw) and tasted great even the next day. I actually hunted down this video because your site has no ability to leave comments. I'd love to know what else I can make using this dough!!! I'm very excited about these rolls! Thanks!

      I have the same issue. I think the recipe is printed wrong. The buttermilk amounts printed and video are also different along with the salt.

    Hi Carolyn, I want to try this recipe, but I'm a little confused. The written recipe is a little different from what you show in the video. In the video, you say 1 1/2 cups buttermilk; the written recipe says 1 cup. You say 4 T. butter; the recipe says 8. You say 1/2 tsp salt; the recipe says 2 tsp. Could you please clarify for me? Thanks!

    Will you please clarify a couple of things you mentioned in the video vs what's in the download?
    Video said 1/2 tsp salt, download said 2 tsp salt.
    Video said 1 1/2 cups cultured buttermilk, download said 1 cup buttermilk.
    Also, if I don't have access to cultured buttermilk, will the conventional stuff on the grocery store shelf be adequate?

      Sa Not . Anytime I need buttermilk I make butter by shaking down some heavy cream. You get about a quarter volume in butter and three-quarters in buttermilk.
      You can shake it in a jar forever, let your mixer churn it slowly for about half an hour, use an old butter churn, or some bread-makers have a butter setting. Keep it cold and it happens quicker.
      This buttermilk is what I use as the liquid for my bread. It gives it just the right bit of sour flavor, and then you have the very best butter for toast.

    I just found you--LOVED your presentation!--and was looking forward to those 4 free breadmaking videos that could put me in the masterclass. (By this past Thanksgiving my dinner rolls started receiving command performances.) Anyway...that link was dead. Or at least I couldn't find those 4 introductory videos. I did try, though.

    Not a criticism but a query. It seems that nothing can happen wirh out "go ahead and"... bake , rise, taste, butter as if those verbs are not enough. Is this a nationwide grammar habit or does it vary within USA? Just wondering. I in NZ watchva number of crafting videos as well as yours and found myself (in New Zealand) saying it but it is not part of our version of the english language yet.

    Have you ever made the dough the night before and set in the refrigerator overnight to hang out and then bake them the next day?

      I left mine to proof overnight on the counter and then finished them the next day. If you put the sourdough in the fridge, your starter will nap until it's warm.

      @@WynterDragon I wanted to do them for dinner. If I were using regular yeast dough, putting it in the fridge and then taking them out first thing in the morning would give me enough time for them to warm back up and do a second rise so I could cook them early evening. I just wasn't sure if it would stunt the second rise for the sourdough if it was put back in the fridge or not. It doesn't matter if it takes longer to rise, i just want it to fully rise.

    i hate asking about substitutions but curious if there are any subs for honey? I see honey used a lot for sourdough but its not an option for my daughter who has fructose malabsorption. Honey is almost all fructose so she can't touch it as her body doesn't digest fructose :(

    Those look wonderful. How do you keep the dough from drying out on top as it is rising? I usually get a dry skin on top of the dough unless I use a wet towel. I have to be careful because the dough wants to stick to the wet towel.

      I use a large plate that covers the bowl. Sometimes I get condensation on the plate, but I don't lose any moisture.

      jca3737 Note how humid the day is and if your warm place is also humid or dry air. If you need to wet the tea towel at all, do so with a mister if you have one. Only let the top side of the towel get wet. Not wet through. If no mister, you can try flicking water with your fingers (my mom’s method), or getting paper towel wet ant patting it onto the tea towel.

      You can make your own buttermilk with lemon and milk!!! Google the recipe but it's easy ❤️

      You can turn any milk into buttermilk by adding a teaspoon of white vinegar to one cup of milk.

      She did not, I've watched it 3 times. Was looking at other recipes from her and depends on what she's making, 1-3 cups. I may try contacting the fb page to see if i can get tips or start with 2c

    For the life of me, I cannot get this recipe to work.
    The printable recipe states 1 cup of buttermilk but the video states 1.5 cups. AND the printable recipe states 2t of salt but she says .5t in the video. My dough is so soupy as done with the printable recipe and never really expands. The sourdough and buttermilk that I have do great in other recipes, so I am really thinking I need more flour and less salt. But when playing around with more flour, I get hocky pucks. Using all purpose unbleached store bought flour.
    Will move on to something else. I give up after 3 attempts. The chickens loved the 36 hock pucks.

    I did the bread course, and ive tried making bread a few times but im doing something wrong? The top is always sooo hard, it has a really hard shell on it. The inside is good, but that no use if i cant cut into it... any one have any idea what i might be doing wrong?

      I would suggest watching some "bake with jack" bread making videos. This guy is awesome, I was having issues until I seen his work. I always weigh my ingrediants
