Always a history buff the day to day details of real life especially in hard times with normal people (vs what kings served at feasts) I am a fan.
Thank you for sharing your favorites with us. I agree, I’ve made the vada pav, Tunisian fricassee, the bologna, and Jacques Pepin’s sandwiches and loved them all. I will admit that with the Gloria, though, I did not use raw onions because I do not like them. But homemade quick pickled shallots with peppercorns, mustard seeds, and coriander seeds were an excellent swap for me. Please keep those sandwiches coming in 2024, but take some time for R&R so you don’t get burned out.

Radish sandwiches sounded so weird at first but hot damn they are great. I like to use French breakfast radishes over those boring grocery store ones.
HIGHLY RECOMMEND the cevapchichi sandwich from croatia. ajvar is a must, with a bit more onion than you think is required.
