I cut my potatoes and carrots the same size as in the video. I started my roast at 7 a.m. Because I read these comments, I was worried that they may be overcooked if they remained in the slow cooker for a full 10 hours on low, so I checked on the veggies at 11:00 a.m. and they were on the verge of being overcooked. Since the pot roast still had 6 more hours (on low) to cook, I had to spoon the potatoes and carrots out otherwise they would have been mush. Next time, I won't add them until the final 3 hours. Glad I checked because I would have been very upset if this dish would have been ruined. UPDATE: After I removed the potatoes and carrots I remembered that I had a sweet potato in the fridge so I pealed, chunked and added it to the slow cooker at around 11: 45. I checked on them at 1:10 p.m. and they were completely cooked, and I removed them. So I'm guessing no more than 1 1/2 hrs (2 hrs max) is necessary for potatoes (red and sweet) and carrots and they can be added at the END of the cook time and if you have to go a little longer with them, it certainly won't hurt the meat any.
I did this recipe with a modification. I did not add potatoes to the slow cooker and instead - made mashed potatoes just before I removed the chuck roast and vegetables. The roast and vegetables along with the sauce in slow cooker made a very tasty gravy for the mashed potatoes!
Usually my wife does all the cooking because Im all thumbs when it comes to complex, non-"just pop it in the microwave" meals, but with this recipe and easy to follow video. My roast came out damn near perfect. Some more seasoning next time and cook for 9 1/2 hours instead of 9 and I can imagine Ill be making this dish many times over in the years to come. I made this today for dinner. It was fabulous ! The only thing I suggest, is use as many veggies that can fit in your cooker. With the amount of beef used, there should be leftovers, so more veggies is a must ! It is so good - will be making this again before the winter is over.

@@wellwellmymichelle If you have an oven, a slow cooker is not needed. Just get a pan that can hold the meat and veggies, cover it up with foil, and leave it in the oven at 225 degrees F or 110 degrees C for 8 to 10 hours.
Comes out great everytime but I add the potatoes and carrots at the last two hours of cook time so they're not over cooked but all in all its a great recipe.

I let myself go by your recipe as this was the 1st time I have ever ate or cooked a pot roast. I vary the recipe a bit. I like better beefy onion dry soup mix. I seared meat with adobo,garlic pepper and smeared it with real garlic. To give it a great flavor. I did use beef broth but also added Cabernet wine 1/2 cup. We don't like celery so I substituted it for mushrooms. I cooked it on high for 6 hours. OMG it was so delicious and the broth was very tasteful and rich. By the time it was done it was coming apart in pieces. Thank you. Mu hubby loved it I did too. 😘👏🏼👍🏼🍷😋
Exactly. I let the meat rest after searing and sauté a vegetable mix (celery, onion, small carrot chunks) and add some flour. This will go on the bottom of the slow cooker. De-glaze with a small amount of liquid and add seasonings of choice. Put the roast in the slow cooker with larger carrot chunks, potatoes, other vegetables and pour the liquid from your de-glazed pan over all of it. You only need a little. You will get a lot of liquid from the roast itself.

Hi Michele, great question. If the roast is larger than 4 pounds, just be sure that the water is halfway up the side of the roast and it will be enough while it slowly cooks. Hope this helps, enjoy!
Bought a standard crockpot from Costco a year ago and it must be much hotter than others. Only took 6 hours on low and it was done. 3.5 lb chuck roast. Only used 1/2 cup of liquid (beef broth).
Should definitely deglaze the pan with the red wine and then add that to the crockpot. And no water, definitely use the beef stock, unless of course you’re on a sodium restrictive diet. I’m so pleased to see that they seared the meat first! Adds such a better flavor to the end product.

I rubbed liquid smoke on mine then flavor-glo and let it sit overnight, put it in the crockpot the next morning with carrots, potatoes, thyme, basil leaves, beef stock, and onion powder and let it cook 9 hours, came out really good

My lazy bachelor pot roast is: chuck beef, dried onion soup, chopped onion, cream of mushroom soup and 2 cans of water, and fresh (or canned) mushrooms. I may add a little garlic or even Montreal Steak Seasoning. My thermostatic cooker can keep it just below a simmer (just a few burbles), and in four hours or so it's fork-tender. The veggies are a separate issue, and after all, this isn't beef stew. I serve pot roast usually with mashed potatoes, and when reheated it's good on toast. If the gravy (the best part) looks a bit watery, I can crank up the heat for a few minutes to reduce it a bit. Also as a leftover, it makes good sandwiches if you frazzle it in a frying pan.

Some people have very bad reactions to msg. It's not very hard to make a good roast in a crockpot without using artificial ingredients. It has nothing to do with this being a "bad" video, it just means some people dislike it.
With one exception this is exactly the way I make mine, only I also add a Campbells cream of mushroom soup along with a package of Lipton soup mix and it comes out delicious. This time I'm plan on trying it without Campbells....Thank you.
I tried this recipe I absolutely love it I had a little bit of water in with my red wine so it wasn't a full cup of red wine three-quarters full the rest water I had a little bit of turnips from my garden and I added small carrots instead of big ones and for spices I had a salt and pepper rubbed it all on with some pepper Rica and a secret spice and I put no salary I cooked it for about 9 hours on low but overall I love the recipe I kind of made it my own thank you most tender meat is for sure

+Adam Lewis 1 hour in a slow cooker for fresh potatoes and carrots? I can guarantee they won't be soggy with just 1 hr in the slow cooker/crockpot. They will barely be warm and hard as rocks. Give this a shot and see what you think. For what you are after, I'd say you might want to plan on a few carrots and onion in the bottom of the cooker just to make the gravy/liquid flavorful and then for what you want to "eat" as a separate veg, you'd better plan on pre prepping them on stove top, in microwave or oven. You can then add them in to CP for 1 hr, but not sure why you'd bother at that point.

This looks amazing! I've got some dried mushrooms and bouillon (beef and chicken), gonna rehydrate the 'shrooms in the bouillon and add that to the mix. Also gonna add some flour to the bouillon to make a gravy-like sauce. Man oh man, it sounds wonderful already! Thanx for posting, definitely gonna make this. I love simple recipes, they're easy and they inspire a person to tweak it as they like. :)
Where the mushrooms? And it's a good idea to coat the roast with flour as well before you seer it, it helps with making the broth a little thicker. And I also use chicken broth instead of beef. Just so that it's not so "beef flavored". More than enough beef flavor comes from the roast itself. The chicken broth creates a unique flavor. Just some suggesstion if people wanna try them :)
Trying this recipe right now as we speak won't be done until midnight so I will have to have it tomorrow but so far so good! Preparing it in my Ninja Cooking System slow cooker mode! Seems so simple, I am sure it will come out great!
normally you can add onion mix and the cream of mushroom soup and its amazing. Dont add any water though as the vegetables and meat produce water when they cook. I added water before and it was too soupy so I had to add flour as well- Lesson learned
And I thought I was the only one who adds a can of cream of mushroom soup to my pot roast.I put the unopened can under the kitchen faucet and let hot water run over it for about a minute.This allows the cream of mushroom soup to easily slide out of the can and into a small bowl. I then mix it up with a spoon for a short time and then spread the soup on top of everything. When its done cooking you end up with a pot roast with the gravy already made.
Great question! We have a similar recipe on our site for Easy Pressure Cooker Pot Roast. You might want to increase the liquid in this recipe and then cook in the pressure cooker for about 35-45 minutes. Hope this helps. Enjoy and please let us know if you try this recipe with a pressure cooker.
I do the sear on all sides without the seasoning in a cast iron pot- dutch oven works best, w/ a tight lid. The meat is held off the bottom w/ 2 or 3 well used tomato can lids, burned off, initially, to remove any coatings. They prevent the meat from cooking too quickly on the bottom. Vegetables add essential flavor to the meat and gravy. I cook on a low fire in the kitchen, but in fall, winter and early spring, I roast in a homemade oven on the woodstove.
I've said it before, but you guys totally ignore me. But this is how you should cook a pot roast. You don't add ingredients after an hour or 2. You put it all in at once.

My wife laughed at me when I tried to get canned potatoes at the store. She only uses canned whole potatoes now with the slow cooker roast. They don't turn to mush and their fully cooked right out of the can.
Nice video on the Beef Roast. It looks so tender. In mine, I put slits in the meat & put in Garlic slices. Marinate with Red Wine, in a plastic bag overnight. Pour out the wine & sear the meat All over. Add Beef Btoth to cover the Roast. Let cook in a Slow Cooker for 3 hours. Peal potatos, cut in half (length wise). Then add Carrots. Cook more. Then add the Onion. Cook. Add the Salt & Pepper to taste. It makes a Very Tender Wonderful meal by itself. ENJOY, ENJOY, ENJOY.
I'm all for browning the roast in a skillet but I would not use olive oil as it is not a "high temp oil", olive oil tastes bitter when subjected to high heat.
Want a great pot roast salt, pepper, garlic, sear on all sides, add Lipton Beefy onion mix and some Lea & Perrins, 3/4 up with beef broth. One hour per pound at 350.

Add beef broth and it taste even better! You can find this in soup section at stores. Also, you can add a little Rosemary and/or garlic to your taste.

It's her video, her very own style of how she chooses to make it and can simply use whatever ingredients she decides to use. ANYWAY, that's not the point of Her video. When you understand the video and why she made it, and who she's trying to reach out too( the one's unaware of making this) and that;a exactly what she did. She did a great job at showing the directions, and made this educational and simple. JUST HOW IT SHOULD BE!
And as far as ingredients go, yes, we may all prefer different ones and most would probably end up shaking things up a bit and adding their own style.
But again, the point of the video was to show simple directions to cook it. this was not a judging contest or some "rate my dish" competition.
So for what the video is and the reason for it, once you get that straightened out, you to will realize how pathetic it is to dislike a video over silly little things. Ramble over.

Robert W Rogers no, it means people who don't want to eat msg and artificial colors and preservatives that are in the instant soup mix probably disliked this video. Some people have very bad reactions to msg. It's not very hard to make a good roast in a crockpot without using artificial ingredients. It has nothing to do with this being a "bad" video, it just means some people dislike it.

If you want a gravy you can separate juices in a pan on stove add a cornstarch slurry heat and boom gravy

Easy to make your own
With one exception this is exactly the way I make mine, only I also add a Campbells cream of mushroom soup along with a package of Lipton soup mix and it comes out delicious. This time I'm plan on trying it without Campbells....Thank you.
I tried this recipe I absolutely love it I had a little bit of water in with my red wine so it wasn't a full cup of red wine three-quarters full the rest water I had a little bit of turnips from my garden and I added small carrots instead of big ones and for spices I had a salt and pepper rubbed it all on with some pepper Rica and a secret spice and I put no salary I cooked it for about 9 hours on low but overall I love the recipe I kind of made it my own thank you most tender meat is for sure
Campbell’s golden mushroom soup and beef bouillon cube, along with the other ingredients, makes for a delicious gravy and flavor.

i feel you need to add the vegetables much later, maybe like 1 hour before it is done because they are soggy if you throw it in the beginning.

+Adam Lewis 1 hour in a slow cooker for fresh potatoes and carrots? I can guarantee they won't be soggy with just 1 hr in the slow cooker/crockpot. They will barely be warm and hard as rocks.
Give this a shot and see what you think.
For what you are after, I'd say you might want to plan on a few carrots and onion in the bottom of the cooker just to make the gravy/liquid flavorful and then for what you want to "eat" as a separate veg, you'd better plan on pre prepping them on stove top, in microwave or oven. You can then add them in to CP for 1 hr, but not sure why you'd bother at that point.

This looks amazing! I've got some dried mushrooms and bouillon (beef and chicken), gonna rehydrate the 'shrooms in the bouillon and add that to the mix. Also gonna add some flour to the bouillon to make a gravy-like sauce. Man oh man, it sounds wonderful already! Thanx for posting, definitely gonna make this. I love simple recipes, they're easy and they inspire a person to tweak it as they like. :)

Where the mushrooms? And it's a good idea to coat the roast with flour as well before you seer it, it helps with making the broth a little thicker. And I also use chicken broth instead of beef. Just so that it's not so "beef flavored". More than enough beef flavor comes from the roast itself. The chicken broth creates a unique flavor. Just some suggesstion if people wanna try them :)

My mother add a can of cream of mushroom soup to hers, the mushrooms add more flavor to the meat and cream adds more body to the sauce.

normally you can add onion mix and the cream of mushroom soup and its amazing. Dont add any water though as the vegetables and meat produce water when they cook. I added water before and it was too soupy so I had to add flour as well- Lesson learned

And I thought I was the only one who adds a can of cream of mushroom soup to my pot roast.I put the unopened can under the kitchen faucet and let hot water run over it for about a minute.This allows the cream of mushroom soup to easily slide out of the can and into a small bowl. I then mix it up with a spoon for a short time and then spread the soup on top of everything. When its done cooking you end up with a pot roast with the gravy already made.
I like to add can of cream of mushroom soup too can also use beer in place of the water
Great question! We have a similar recipe on our site for Easy Pressure Cooker Pot Roast. You might want to increase the liquid in this recipe and then cook in the pressure cooker for about 35-45 minutes. Hope this helps. Enjoy and please let us know if you try this recipe with a pressure cooker.

I used a can of beer instead of a cup of water. The alcohol in the beer also tends to help tenderize the meat. Just my two cents.

I do the sear on all sides without the seasoning in a cast iron pot- dutch oven works best, w/ a tight lid. The meat is held off the bottom w/ 2 or 3 well used tomato can lids, burned off, initially, to remove any coatings. They prevent the meat from cooking too quickly on the bottom. Vegetables add essential flavor to the meat and gravy. I cook on a low fire in the kitchen, but in fall, winter and early spring, I roast in a homemade oven on the woodstove.

I've said it before, but you guys totally ignore me. But this is how you should cook a pot roast. You don't add ingredients after an hour or 2. You put it all in at once.

In mine, I put slits in the meat & put in Garlic slices. Marinate with Red Wine, in a plastic bag overnight. Pour out the wine & sear the meat All over. Add Beef Btoth to cover the Roast. Let cook in a Slow Cooker for 3 hours. Peal potatos, cut in half (length wise). Then add Carrots. Cook more. Then add the Onion. Cook. Add the Salt & Pepper to taste.
It makes a Very Tender Wonderful meal by itself.

I'm all for browning the roast in a skillet but I would not use olive oil as it is not a "high temp oil", olive oil tastes bitter when subjected to high heat.

Want a great pot roast salt, pepper, garlic, sear on all sides, add Lipton Beefy onion mix and some Lea & Perrins, 3/4 up with beef broth. One hour per pound at 350.
