I’m working on a segment of videos focusing on note-reading, all the way from basic to advanced, and I plan to introduce some music theory concepts as they are relevant. So, I will probably cover key signatures at some point, but it may be a little while. Meanwhile, I’d suggest looking into the circle of fifths. There’s so much stuff in music that is organized according to some pattern or logic, and I always recommend understanding the logic rather than trying to memorize all the information by brute force. If you understand the circle of fifths, you’ve got a formula for generating all the key signatures.
