I used sofrito for the stuffing, and because my thighs were skinless, i used toothpicks instead of butcher's twine, dredged them in flour, then egg wash,, then breadcrumbs. Came ut delish! Thanks guys!

Glen thanks for the inspiration, yet again! I think what I am going to do is ATK's Apple Cranberry Pork Loin recipe with your amazing idea for turkey! I'm trying this tonight to have it ready for tomorrows feast!!
Those turkey thighs looked great! I will admit that it did look like a good bit of Sage and Rosemary, but I have used what I thought was a lot before and it turned out that I could barely even taste the herb because of how powerful the meat flavor was.
Yeah I definitely used too much in the video - I've adjusted the written recipe to a more reasonable amount for myself and Julie, but everyone is a little different. I think it was also more pronounced because I ground it in the mortar and pestle.
I tried to make these with turkey breasts instead of thighs, since thighs were impossible to find. Turned out very dry as turkey breasts tend to, but the flavour was fantastic!
Looks so delicious! Great idea with the skin - just next time take a piece with the skin and tell us how incredible it is!!! Please!? Pretty, pretty please!!??
Rosemary + Sage = an unpleasant earthy flavor. I try to only use one or the other in a dish. Supplement with another herb, such as Basil, Oregano, Thyme, Marjoram, Chives; add Parsley or Celery Leaves if needed.

Thanks for the Video! I added some lemon zest and juice and stirred it into butter and it came out vary nice.

I have done something like this with chicken breast but i use the sin of a boxes stuffing mix only adding in the butter and half a cup of water
