The votes need to be counted. Some states don't process the mail-in ballots so it may take a week or more for them to get done. Then the candidates have the opportunity to challenge the vote counts. That's 2-3 weeks more. The states delegates then assemble to hold the EC election. Which is just before the holidays. The results are then sent to the new Congress which doesn't form until January. Congress then has 2 weeks to certify the incoming cabinet members. If can't trust the person in charge to not create chaos for the next administration, why did you vote them in in the first place? What is the other choice? Remove them from office the day after the election and make the Speaker of the House the interim president.
