He is cooking definitely not rice. This yelowish grain is however being washed first, just like when you cook rice. Any body can tell what he is cooking? Maize grain? Corn flour however for didho and you never wash it. The food (yellowish) is it didho? It looks delicious though...

El maíz es de América y lo llevó Cristobal Colón desde Cuba a España.Los italianos en sus épocas de crisis alimentarias o hambrunas comían mucha harina de maíz con el nombre de polenta y así se sigue llamando.En Nepal no le ponen sal ni grasa la cocinan al igual que el arroz.El maíz puede elaborarse tierno y con el de esta forma pueden hacerse muchos platos o platillos salados o dulces a gusto.La mejor manera de hacerla es poniendo a hervir el agua con la sal y la grasa y después verterle la harina lavada para que pierda la corteza de celulosa del grano por arrastre mecánico con el agua del lavado.

Like he prepare the corn flour firt in cold water then put it in stove ,like that it comes softer.not so hard like i seen in others videos.that looks hard as a rock and u could see it when they serving it the struggle they go to get it out of the pot. 💞💞💞
They both are different dishes.This is Aato and the other one that is harder is dhindo. this is made from medium ground polenta and the other made from fine ground pokenta.
Is it ground corn he’s cooking?

Azizah Abdullah I don’t understand what he means by maize rice either, because maize is corn. From another video that I watched, they had two bags, one yellow and one white. The camera guy said corn flour and rice flour, corn flour was used for this meal, I don’t recall seeing the white bag, which has rice flour n it.
