If you can get identical results using different ingredients then it doesn't really matter. You can often swap out 100% but even 50% or whatever is an improvement. FYI, the density of sucralose is about 1/8th that of sugar, so about 12g is equivalent to 100g sugar if cooking by weight.
From a legal perspective white "chocolate" is not chocolate, since for something to be qualified as chocolate it must have more than 35% of cocoa solids.

Tempering isn't "Hard" per se. It's just tedious, a pain in the ass, and there's basically no room for error
