At the beginning, I use my thumb to pluck the lowest note of each chord, then use my index finger to cover the D string, middle finger to cover G, and ring finger to play B.
I hear you…we can’t stick with easy chords forever, though! 😎 I try my best to respect the way the songwriter arranged the song and play as closely to that as possible, not only to their credit but to also give my best as a musical offering of praise and worship to the Lord. There are times where I can simplify things but if I do that for every song, it wouldn’t be my best, it would be just enough to get by.
