    I seen the image that was medium rare and it looked so good. I agree that Montreal Steak Seasoning is great tasting on meat. You did a great job on that meat.

    I suggest a different fat for the pan when browning since EVOO doesnt do a great job and has a low smoke point. Glad you pointed out it keeps cooking, people often overlook that. 144 is high side of medium right?

    I can’t do medium rare. I simmer longer in gravy.
