4:48 It's caused by exposure of the potatoes to sunlight. The solanine (a toxin that can cause digestive problems) content in the potato increases when exposed to sunlight. You can sow green potatoes though. You can prevent it next time by mulching.

We had some wild shaped potatoes, that's for sure!!! A frittata with baby potatoes sounds amazing!!! We may have to give that a try!
