PORK RINDS IN GREEN SAUCE

  • CHICHARRON IN GREEN SAUCE, pork rinds in green sauce.
    Ingredients:
    1 kilo of tomato
    150 grams of cracklings
    5 small nopales
    Some branches of coriander.
    A piece of onion
    4 mountain chiles.
    2 garlic
    A cube of chicken broth.
    Oil.
    Salt.
    preparation:
    1. Cut the nopales into thin strips and then in half.
    2. Place the nopales in a saucepan and add 2 cups of water
    3. Add a little salt and let boil for 5 minutes over high heat
    4. Turn off and let cool
    5. Strain the nopales
    6. Cut the tomatoes to be liquefied
    7. Blend a portion of the tomatoes with onion, chilies, garlic and ½ cup of water
    8. Finish liquefying the other tomatoes
    9. Finally, add the cilantro
    10. Place a tablespoon of oil in a pre-heated saucepan
    11. Add the sauce
    12. Add the salt
    13. Add the consommé
    14. Cover and let cook for 2 minutes over medium heat
    16. Add nopales
    17. Add 2 cups of water
    18. Cover and let cook for 5 more minutes
    19. Now add the chicharrón in pieces
    20. Soak the pork rind with the sauce
    22. Cover and let cook for 2 minutes
    23. Move the pork crackling again so that it absorbs the sauce and lets cook for 3 more minutes
    24. Ready, good profit!
