+Hiroshi Bell It's foodsafe wax - it seals the cut stem to prevent it from molding. The skin of the bananas and stem won't rot, but the inside of the stem can rot if it is cut and exposed. It also prevents water from getting into the cut stem - if too much water is absorbed the stem will fall apart and the bananas will come off.

Post harvest treatment to preserve freshness....mask and gloves on. What is this "treatment"?
+Hiroshi Bell It's foodsafe wax - it seals the cut stem to prevent it from molding. The skin of the bananas and stem won't rot, but the inside of the stem can rot if it is cut and exposed. It also prevents water from getting into the cut stem - if too much water is absorbed the stem will fall apart and the bananas will come off.
The mask is to prevent people from coughing or sneezing into the produce, the gloves are to prevent dirt and other stuf from touching the bananas
