Saucy Sharon - Cauliflower Fit for a Queen

- After discovering that the Real Women of Philadelphia contest was a sham, Saucy Sharon and Ben decide to pull out all the stops and make ridiculously outlandish videos, just to attract some attention and get a few laughs. In this episode, despite the magically-appearing Queen of the Mirror and some stupendously bad special effects, Saucy Sharon makes what is most likely her delicious dish of all, a creamy cauliflower, bacon, Asiago, and poblano casserole. Here's the recipe:
On the top rack of your oven, place:
1 Poblano pepper, whole
Turn the broiler on high, and broil until the skin is blackened. Turn the pepper over with tongs and blacken on the other side. Remove to a cooling board to rest.
In a heavy skillet over medium high heat, cook:
6 strips of bacon, sliced
When crisp, remove bacon to a bowl, and pour off all but about 2 Tablespoons of bacon fat. Reduce heat to medium. To the skillet, add:
1 onion, chopped
6-10 cloves garlic, chopped
When onions begin to brown around the edges, add:
2 heaping Tablespoons flour
Stir constantly until flour begins to brown. Add:
2 cups milk
Stir constantly. When mixture begins to thicken, add:
1 8-oz block cream cheese, cut into cubes
Stir until cheese has melted into the sauce. Add:
4 ounces Asiago cheese (or any pungent aged cheese like Gruyere or Parmigiano-Reggiano)
When mixture is smoothly melted, remove from heat and season to taste with salt and pepper.
When Poblano pepper has cooled, cut off stem, slice open and scrape out seeds, and chop. (No need to remove the skin.)
In a large bowl, combine:
1 head cauliflower (broken into bite-sized florets)
cooked bacon
chopped Poblano
cheese sauce
Stir until the sauce has coated everything well. Scrape into a greased 8"x8" glass pan and bake on the center rack of a 400F oven for 20 minutes.
In a small bowl, combine:
1 cup breadcrumbs
2 Tablespoons olive oil
1 Tablespoon garlic powder
1 teaspoon kosher salt
Toss until crumbs are evenly moistened.
Spread onto casserole and return to the 400F oven for 10 minutes, or until breadcrumbs are evenly browned.
Let casserole sit for 10 minutes before serving.
This cauliflower is like heaven on a fork.
It would go great with beef, chicken, or pork.
The cauliflower still has the tiniest bit of crunch,
The Asiago and Poblano add that perfect punch.
The bacon in there is sure to please,
And it's all made possible by Philadelphia cream cheese.
