Amna Mere bache thank you so much for this particular recipe because you know that kaleji especially when it is fried on the Tawa is one thing North Indians cannot do without . now one really amusing Tawa kaleji ka mazedar kissa suniye in the life and times of me my younger brother and cousins. I remember the first time I ate this particular dish when I was about seven years old early 1970 and was at my mausi's house Dilli visiting during the summer vacation from the south of India Hyderabad Secunderabad Jahan abbajan Ki posting hui thi. The male elders were doing gupshup, the ladies were doing the cooking and we children 4 of us were doing the serving like well brought up little children of our times and generation. My mausi handed me one plate and said go give it to your daddy and your uncles . Bas Phir kiya tha 1 piece khana Hi Tha aur uske baad Ek Aur piece aur uske baad Ek Aur piece and within 5 minutes Puri plate khatam ! I think I finished about hundred grams of Spiced delicious Tawa fry kaleji all by myself. Elders bahut Khafa ! you greedy little baccha. And I being a bit of an innocent and spoilt simpleton happened to say" Aap to yeh sab apne aap kha lete Hain Hum bacchon Ko To Kabhi mauka Nahi Milta k ise kha saken. " Everybody sun ke awaak! Pehle To Ek bache Ne adults Ke Samne Rubaru ho kar muh khola , dusra pata nahin kya bol Gaya! Butcher ne very straight face Se Mujhe Kaha fresh Bakre ki kaleji sir, only 800 rupees kilo. Main bhai thehra Sidha Sada din bhar imaan ki khattne waala salaried Aadmi on Limited Aamdani and budget bus Choti Si Muskurahat Leke dukaan se bina kuch khareede bahar nikal Aaya. Lekin Bande isse 800rupees kilo Mein aaram se kha rahe hain. No wonder Hotel wale ek Chotisi plate 250 rupees spiced kaleji Tawa serve kar rahe hain. Ahh well!
