Nice couple Mahi! The smaller skinny one, we call a “dinker” in Hawaii, and I actually prefer the sweeter taste compared to the big bulls. Either way, Mahi Mahi is my favorite fish to eat cooked, though it’s pretty good sashimi as well. But you can’t beat fatty Ahi for sashimi or poké. I’ve caught lots of ahi through the decades and just couldn’t bring myself to cook it. Blackened is great with the inside still rare. It’s meant to eat raw. We have lots of ciguatera in Hawaii as well in some reef fish but I’ve never heard the fly-test that you learned in Samoa. That’s very cool and like you, I’d trust that knowledge since ciguatera poisoning is the last thing I wanted to catch. So, we always carried ciguatera test kits on the boat with us. None of the pelagic fish have it but every once in a while we’d catch a huge barracuda while out trolling and you know that sucker grew up on the reef and they’re notorious for having ciguatera. We caught a huge 30 pounder while trolling “Ono Lane” between Makapu’u and Kaneohe one time and broke out the test kit. It came out negative so we did a taste test, comparing barracuda and Mahi sautéed in butter and garlic. (The barracuda meat is a strange greenish/blue color but just white after cooking) My girlfriend liked the barracuda better than the mahi. It was good, but to me, nothing beats mahi, sorry babe. I think most of my bias against barracuda was psychological. What if the test kit was expired and this thing had ciguatera anyway? I just took a few nibbles but my girlfriend scarfed a huge fillet and she was fine. Good idea passing on the needlefish, bro. The flies be wise. 🤙🏼

You were right to pass on the Long Tom. I was surprised that it was kept because, as far as I know, it's not a very good eater. They are reef hunters the bigger they get, the more likely the chance of ciguatera. Aside from that, Nicaragua looks bomb. I am a coffee lover so I ordered some of Elton's, It got here quickly and smelled so good and fresh. Yum!

I ground it a little finer to use with the Keurig, which for sure doesn't do it justice; but, it's actually quite a nice cup. The finer grind and the slow drip with it set to strong make a great cup. Pretty cool you're in Nicaragua man, as a korean that grew up there I love and miss all the good food from there. For fish greatly recommend the red snapper if you find any and try a guirila man, its great. Hope you enjoy it
You should bring a Ciguatera test kit with you. I've also heard that about Ciguatera and flies. But I was also told that most reef and predatory fish have some level of cig, but higher in some areas. And that it's cumulative in the human body, so once you hit a certain amount of consumption, you get the poisoning effects. Don't know if that's true, but it's what I've heard. University of Hawaii is doing some pretty extensive research on it though, which is promising.
Accumulating in people makes some sense because I have friends in Niue that ate a big GT and some of his family members got cig and others didn’t by eating the same fish. So maybe that has some truth to it

You should have grabbed a carrot and red onion for the cabbage. Make coleslaw with some mayonnaise and vinegar,salt and pepper. Add a little pineapple in there too. Bbq smoke pits do that around here. Very delicious. But iam sure you have delicious idea

Mahi Mahi is one of my favorite sashimi fish. A little soy sauce, sweet onion and a dash of olive oil or sesame oil and let sit for 20 mins or just shake in a container and eat immediately.

Jesus, that needlefish is the longest one I've ever seen... Like.. I didn't even know that they grew that large. xD My personal best on a needlefish was about 42cm, (~16 inch) and I thought that was huge. xD Was a really fun fight on the rod too. :) Perhaps it was different species of needlefish, or just that the climate where I live is very mild. :P I am from Sweden.
Cig is no joke. I have a place in the Bahamas and there are so many poisonings from folks eating toxic fish. That Needlefish was huge, wow, definitely a good idea to pass on it.
Haha here is another myth about ciguatera, if the cat won’t eat it it’s got ciguatera. Some countries have test kits but very hard to get in Australia , coral trout and mackerel have it, it also builds up in your body, give bigger fish the miss as they have plenty time to build up levels from eating other fish. But don’t get to worried as it’s not that common.
Ciguatera is almost non existent on the pacific side of Nicaragua and Costa Rica. This because there is very little coral reefs on the Pacific side. It's the Carribean side that you gotta be careful.
I've seen a lot of needle fish. I have never seen one that big! Thats four times bigger than the biggest one I've seen. I've heard it called "poor man's marlin".

What did you do with the contaminated fish filets?
well we need to figure out what in this ciguatera that makes flies go away and mass produce that as a fly deterrent.
Call it dorado, and you can only charge 12.95, call it mahimahi you can charge 23.95
Another one is the cats wont eat the fish if they smell something wrong that's why no flies are on the fish. Cats are usually cautious.
