You say you can't imagine getting that angry? I worked Golden Gloves security about 10 years ago, and I can tell you a few stories. Most of the anger comes from spectators and family members of the fighters, not the fighters themselves.
People tend to get angriest when they feel cheated. The problem is, in the heat of a bout, they lose focus of the big picture and instead narrowly focus on a much smaller notion of what is "fair." Rational people can become spurious amazingly quickly. Things that would normally be petty become things you are suddenly willing to risk your life for. Alcohol certainly doesn't help.

I remember being 10 years old and yelling at the TV because of the Andrew Golota fight lol I can't imagine the rush of anger the audience felt witnessing that live.
Khabib's outburst was completely justified. Conor went way past fight-hyping trash talk and said things that would get you killed in most places. Ironically, that octagon was the safest place for Conor.
Edit: Forgetting the religious side of things, one man insulting another man's parents in public is already enough to kick off a justifiable vendetta in countless cultures across Eastern Europe, the Balkans, Central Asia, Central/South America, the Northern half of Africa, and the Middle East. I'm a fan of both fighters, but honestly Mayweather would've had it. Pacquiao would have made him fight an uphill battle in the early rounds and would have regained control (same as Shane Mosley).
It's easy to hate Mayweather and let our emotions cloud our understanding of the craft. Mayweather's ability to observe and respond (retinal response time) and his ability to insight check his opponents/read patterns (boxing IQ and wisdom) are off the charts.
