Pro tip: on the last layer of mozzarella bring it up over the edges of the crust so it’s exposed to the heat, you’ll get nice caramelization and have a copy of pequods pizza. So cheese, sauce, sausage, cheese up on the edges, and finally sauce and parm on top. I think I got that order correct

I was born and raised in Chicago. Deep dish is great. But it is not something that we eat on a regular basis. Growing up we ordered thin crust pasta from our local favorite pizza joint. Never deep dish. But......deep dish is a treat. If you’re going to eat deep dish then Lou Malanati’s is the BEST. Their deep dish and thin crust is amazing. You also never roll out deep dish pizza dough. It’s all about the oil that needs to be added in the beginning this is the key to a crunchy crust. You press the dough around the cast iron pan. And never layer it like a lasagna. I’m a purist so it makes me nuts. But.......... I will say it looks tasty.
Need to use more oil in the pan and let the dough rise a bit in the pan. The goal's to get a bit of a deep-fry effect on the outside of the crust, while it's a bit bready in the middle but protected by the cheese from going soggy.
