An article was written in Chopin's time by someone who observed that Chopin played the piano the same way that legato is produced on the organ, substituting fingers and holding down keys as he sailed up and down the organ keyboard. I can't remember who recorded the observation but I have come across it a few times. Apparently Chopin could do this at top speed which explains a lot about the sound he must have produced on the piano.
This smooth finger legato technique reminds me of a masterclass by Krystian Zimerman here on RUclips. He basically asked the student to sit down on the floor in front of the piano and press the keys with just their fingers.

I was taught or maybe I read to, for instance, change from 5 to 2 by also using the fingers in between, e.g. 5, 4, 3, 2. I change fingers on a key a lot when playing Bach, perhaps without pedal.

There are several ways to play legato. It is a more complex issue than what it is shown there.
