Crockpot lemon and garlic chicken thighs:
INGREDIENTS
-6-8 boneless skinless chicken thighs
- 1 onion chopped
-1/2 teaspoon salt and pepper
-1 teaspoon garlic powder
-1 teaspoon onion powder
-1/2 teaspoon crushed red chili pepper flakes
-1/2 teaspoon paprika
-4 garlic cloves, sliced or minced
-1 teaspoon Italian seasoning
-1/2 stick butter, diced
-Zest of a lemon
-Juice of one lemon
-1/3 cup chicken broth
lemon slices, for garnish
DIRECTIONS
- In a small bowl, combine Italian seasoning, onion powder, garlic powder, paprika, crushed red chili pepper flakes, salt, and pepper. Sprinkle the spice mix over the chicken thighs.
- Add 1 tablespoon of olive oil to a skillet and grill chicken for 1-2 minutes on each side or until slightly browned. Remove chicken and set aside.
- Add chopped onion and garlic and cook for 2-3 minutes.
-Place chicken thighs at the bottom of your slow cooker. Pour onion and garlic mixture over chicken. -Combine 1/3 cup chicken broth, lemon juice, and zest, and pour over chicken thighs.
- Top with diced butter.
- Cover the crockpot and cook the chicken thighs for 3-4 hours on HIGH or 6-8 hours on LOW.
-garnish with lemon slices. Serve hot with rice, mashed potatoes, cauliflower rice, zucchini noodles, pasta or quinoa. Enjoy!
