Episode 10 of this daily good stuff!
Here I will be showcasing the daily life of the solo chocolatier and solo entrepreneur that I am (at the moment) and bringing the ins and outs of everything I do with chocolate, and in my general life!
Today, I’m actually having a bit of a break from chocolate and try my hand at macarons!
These were Raspberry and Rose Macarons.
Here is what you’ll need:
170g icing sugar
160g almond flour
120g granulated sugar
120g egg whites, separated in half
50g water
Your choice of food colouring
200g white chocolate
60g double cream
Rosewater
30g raspberry puree
30g jam sugar

Those look fantastic! I have only ever had them once before and they were awesome. My brother's a professional chef and had to make some for an event and he saved me three. The process looks a bit intimidating.
ChocolateRx thank you! They are beautiful things. I think the hardest part is the Italian meringue, but to be honest if you use your thermometer it’s easy and then from there I think it’s okay!
