I'm Thai but IDK much about Mexican food. After seeing pad thai sopes, I looks that detail about sope and I think it might be work better together with either Som Tam (papaya salad) or Nam Tok than pad thai that also has a lot carbohydrate from noodles.
Mexican food has become a lot more popular in Bangkok and a lot of the ingredients are similar to Thai food. It’s super hi so there still but eventually it will be more accessible there.

It seemed like an odd choice to put those together. I would've put pad thai with something like menudo.
