After boiling u could put it in some cold water add about a tablespoon of vinegar and let it sit a while the vinegar removes the salt if you don't want it to taste salty

You can use the same method. The butcher can cut it up for you and dress it nicely. You don't have to brine because of the salt they use in processing the product.

Why does the Pig Tails look round & Blunt on the end, & not slender & curly? The ends of them do not appear to have been chopped off. I know they are pig tails but they just don't look like the tails on the live hogs.

+Hafeeza Mohammed I am from australia and tried this recipe twice and found it still salty after double boiling, my mother told me to put a little parsley in the boiling water to draw the salt.....worked amazingly.
Hafeeza Mohammed, put some brown sugar in the water when you are boiling the pigtails. The brown sugar taps the salt out of the tails...also, squeeze some lemon/lime juice or even cut a lemon/lime in half and put only one half in the water while it boils. Boil for about 20-25 minutes and throw off the water. Cover the tails in fresh water again and do this about three times, make sure you put the brown sugar each time. The tails have to have a little salt still, after all, it's why we love them so much...lol!! Then pop those babies on the grill and let that charcoal flavor infuse them, turn from side to side applying your bbq sauce generously....If you can get any kind of wood chips, such as cheery, applewood, etc. you can add those to the charcoal also...wicked flavor!!

You should get an electric pressure cooker to boil quicker. Delicious!
Or slow cook them in a crock pot over night and then grill them. Much more tender.
