I began learning Spanish to test out of my high school foreign language credit, but now I'm genuinely interested in the culture. Thank you so much for opening up a new world for your viewers!
I think this way: for one o'clock it is different because '1' is singular and for singular we use 'es' and 'la' is used because hour is feminine and singular here (due to 1) while for any other time it is plural and we have to use 'son' which is used for plural cases (2nd column third row of chart) and for plural we use 'las' and the problem solved.
