Why does there seem to be two different versions of this piece? Whenever I search it, it’s always a version different from this, but I know for a fact this is the version I played when I was young in a beginner piano book and I’ve never been able to find it anywhere past this video.
Because this is Sergei Rachmaninoff's adaptation for the piano of Bach's Partita for solo violin. If you're searching it might be listed as Rachmaninoff-Bach.

I hate the tone of the piano and prefer the harpsichord, it's entirely subjective, everything transposed to the piano seems just more lifeless. For example Bachs Chaconne just sounds absolutely atrocious to me on the piano but deeply moving on the violin, guitar, lute and harpsichord

I think that's because it's originally a violin piece- Bach Partita No. 3 Gavotte en rondeau
I think you may be looking for the Gavotte from French Suite No.5 in G Major BWV816 (i just went through a similar frustrating journey)
