    Wonderful information! Just what I was looking for! Thanks so much. Think I have decided on a CCK thin cleaver, carbon steel. Nice to find this short, information packed video about Chinese cleavers after watching so many fluffy vague ones. And you mentioned Kiwi knives to boot, a favorite of mine for years (and what I am upgrading from)...

      this is their official website. They are one of the oldest surviving knife shops in Hong Kong.
      with the ones I showed, they are carbon steel, which means you need to wash it after each use and oil it. Otherwise it rusts

      When I had my food biz, I liked the CCK knives because it stayed shaper for longer. we were cutting 40kgs of beef and lamb each per day. I started with Global and Shun knives and even tried the Wusthof ones. Those were great knives but lack the sturdiness behind it.

      You are right, Shuns are very delicate. They don't like to be abused.
      I will pick one up a CCK chinese chefs knife and a bone cleaver when I am in HK the next time. My wife often asks me to chop ribs ... I think I need a bigger cleaver. I bet you feel like rambo holding one of those ;-)

    Are there any good Chinese veggie knifes on AliExpress with round wooden handle. No stainless steel models, cuz they wont stay sharp. I have found a shibazi veggie chef knife, but i dont know if its a good one from AliExpress.

    I wanted a CCK for ages but couldn't find them for a decent price in Australia so I got a shibazi F208-2 and a S210-2 from Aliexpress. Both of them are awesome. It was interesting hearing you pronounce shibazi so fast because in my head I've just been saying "shee bar zee"

    Thank you for a very informative and practical video that has served me well in my new and ongoing efforts to demystify and uncover the rather 'murky' topic of cleavers - meat, vegetable and all purpose. I have been dabbling into the world of culinary knives and cleavers for some time and I am really making an effort to educate myself with regards to the intricacies of this often overlooked and relatively unknown aspect of culinary skills for the novice.
