Speaking of Jalapeño Gravy…years ago (early 2000’s), Terry Chandler at the original Fred’s Texas Cafe in Fort Worth, used to make a “Special” every so often called The Chuck Wagon Steak Dinner and main entree was a Chicken Fried Steak that was drowned in Chipotle Gravy and it seems like it had fries or mashed potatoes. KILLER GOOD!! I like Jalapeño Gravy but using Chipotles vs Jalapeños…Chipotle’s win hands down every time. At home these days, we’ve even been doing Chipotle Sausage Gravy & Biscuits for weekend Breakfasts/Brunches!. Love you guys… “Ol’ Scooter” in East Texas…
The Renfair in Magnolia is fantastic! Jousting, falconry, etc. I bought some fantastic soup bowls from a couple of potters. Well worth going to and get tickets in advance.
Ask any wildlife manager on the Gulf Coast what they think about Chinese Tallow. I love trees myself, but after having a wildlife management class or two I came to appreciate how some trees (as you indicated) deserve severe management.
Fun fact: Scarborough Faire is the second largest renaissance fair in the country, second only to Texas Renaissance Festival, which is the largest in the entire world. HBO is releasing a doc-drama about the insane world of TRF “royalty” politics this summer. You should totally do an episode on TRF, but you’d need to camp and have an iron liver for the full experience.
