Are you sure your missing package is not going international? I had a buyer ask for refund after their package didn't arrive in a week. When I tried to do a missing mail inquiry on it I couldn't because it turned out the address the buyer used was a third party reshipper. There is a hub for that in Miami.
From Thanksgiving on I increase my handling time every year because between the low estimated delivery times Ebay tells buyers and the increase in delays with the USPS, a seller can't win during the holiday season. Just over New Year's I sold something and Ebay said I needed to mail it by Jan. 2nd (it sold on the 31st), which is fine, BUT they told the buyer they could expect it between Jan. 2nd and Jan. 5th. Now, how can you tell me that I can mail it as late as the 2nd, but that the buyer can also expect it that same day--and over a holiday?
The business policies is a pain. Things get changed on there and they you have to go correct it . Especially if you end and sell similar. I like it though you just have to go in and change any that fall under a different category.

It's only a problem if they buy one of the items you listed while on time away. Those items do not fall under the time away handling times.

eBay really needs to do better with their estimates.
If you call ebay and the item is still in transit they are happy to give you an extra 10 days to settle the case.
